Brunch Cocktails: Pineapple Mimosa Recipe

For me, Spring and Summer are the official outdoor seasons. It’s the perfect time of the year to host and outdoor party, invite some friends to a picnic, indulge in some brunch outdoors showering in the sun and just about any other activity you can think that involves being out of the house. Obviously, the warm weather asks for some warm weather appropriate drinks and this Pineapple Mimosa is just perfect for it!

The best thing of all is that you can make it a Mocktail or a Cocktail. You can keep things alcohol free or booze them up so they fit your tastes without losing any of the flavor or fun. And while the traditional Mimosa is delicious this Pineapple one has the perfect amount of tropical flair to make the season memorable.


I also like to decorate them a bit to make them more visually interesting so a slice of pineapple is just perfect for that. You can serve them in a glass but in order to make things more elegant, I prefer to serve them in a flute. I feel they look chic and glam, and that they amp up the festive factor.

Overall my favorite thing about this recipe is that it’s incredibly easy to make! Just mix everything pour into your flutes, add a pineapple slice and call it a day. I mean it can’t get easier than that, right? To make it just as sparkly as the traditional mimosa without using bubbly I went for some club soda. It really lets the pineapple flavor shine so I recommend going with a natural juice to get the flavors as bright as possible.



¼ Cup cold pineapple juice
¼ Cup chilled bubbly or club soda.


Mix both ingredients. Pour into a flute.
Decorate with a pineapple wedge and enjoy.
