Now, if you’ve been hanging around this blog for a while, you know that I’m not much of a cook, more of a drink wine while my husband cooks kinda girl…but I’ve been getting kind of good at 3 ingredient dishes! 3 ingredients, minimal instructions and minimal mess sounds like my kind of cooking! So, I’d like to introduce a new section to the blog and it’s called 3 Ingredient Recipes (duh! right?) Anywho each week, I’ll bring you a new 3 ingredient recipe for you to try!
Update: I also made a Gluten-Free version of this cookie!
Today I made super (duper!) delicious Pumpkin Fudge Melt Cookies. This recipe was given to me by my fellow bus stop babe and neighbor Betsy! All you need for this recipe is a box of Spice Cake Mix, a can of pumpkin & chocolate chip cookies! That’s it! Remember this is a frugal living blog, so check to see if there are any coupons for these items before heading out to the store! ;)
- Box of Spice Cake Mix
- 1 can of Pumpkin
- 3/4 bag of Semi-Sweet chocolate Chips
- Preheat oven to 350
Dump all 3 ingredients into a mixing bowl and start mixing. You can do it with a mixer or a spoon. I don’t have a fancy mixer, so I whipped mine up with a good old fashioned wooden spoon.
Mix the ingredients until they are well blended and all of the cake mix has been absorbed into the pumpkin puree. It should look like the bowl you see above. The best part is that you can eat the batter, because there are NO eggs! ;)
Spray a cookie sheet with Pam and use two spoons to drop balls of the batter on the cookie sheet. The cookies don’t really spread out so you can put them closer together. Put them in the oven for 8-10 minutes.
This is what they look like coming out of the oven! Da-lish-balls! :) The chocolate is soo ooey and gooey and the Pumpkin really makes them light and fluffy! Eat them right away (like I did) or let them cool on a baking rack.
